Why Jhatka

A Jammu tradition.

Jammu is a jhatka city. Our families, our temples, our culture — all built on this tradition. We built Wok & Dum because there was no premium jhatka biryani brand that Jammu could call its own. Not one that packaged food properly, certified its kitchen, and delivered something worth sharing on Instagram.

The Kitchen

One kitchen. One recipe.

Everything begins and ends in our FSSAI-certified central kitchen. Cooked every morning by our head chef, who learned dum cooking the old way. The biryani that reaches Bhakshi Nagar and Nanak Nagar is the same biryani — sealed fresh, temperature-checked, delivered within hours.

The Promise

Nothing reheated. Ever.

We don't reheat. We don't store overnight. We don't compromise on jhatka. If we run out, we run out. That's the deal.

The Packaging

Sealed like it matters.

We spent weeks finding the right microwavable box — the kind Itsu uses for sushi in London. Because Jammu deserves food packaged with as much care as anywhere in the world.
